It is very easy to make a deliious uthappam.
1. urad dal – 1 Cup
2. raw rice – 3 Cups
3. minced ginger – 1 Table spoon
4. Small onions (chopped) – 3 Nos
5. Chopped coriander leaves – 2 Table Spoons
6.green chillies – 2-4 (Cut in to small Pieces)
7. Salt to taste
8. Cooking oil
Wash urad dal and rice separately.
Soak in water for 3-4 hours in two bowls.
Grind them separately to smooth paste using some water.
Mix them and add the salt and Keep it for the whole night for the batter to ferment.
Mix the batter well next morning till it is sufficiently thick.
Mix the green chillies, onion, coriander leaves and ginger in a bowl.
Heat a flat griddle and wipe with some oil.
Pour the batter on it with a ladle and spread it to a thick circle. (You may lighten the batter as required)
wait for 2-3 min.Sprinkle some onion mixture on the top side and overturn the Uttapam. You may add some oil on the sides.
Cook in the same way on the other side.
When it is roasted enough, serve it with chutney or sambar.
