Method of Preparation (తయారీ విధానం)
English
-
Soak and Cook Dal: Wash and soak the chana dal in water for 2 to 3 hours. Boil the soaked dal in sufficient water until soft yet firm enough to hold shape. Drain excess water completely using a strainer and set aside.
-
Knead Soft Dough: In a mixing bowl, combine maida flour, a pinch of salt, 2 tablespoons of oil, and water. Knead into a very soft, pliable, and loose dough. Drizzle remaining oil over the top, cover with a damp cloth, and let it rest for at least 1 hour.
-
Prepare Jaggery Syrup (Teega Pakam): In a heavy-bottomed pan, add powdered jaggery with a few tablespoons of water. Heat on medium until the jaggery dissolves completely and reaches a single-thread consistency (Teega Pakam – when a drop is placed in water, it stays together without dissolving instantly).
-
Prepare Poornam Filling: Add the cooked soft chana dal and cardamom powder to the jaggery syrup. Stir well on low heat until the mixture thickens. Turn off the flame, allow it to cool, and grind into a smooth, thick paste (Poornam). Divide into equal lemon-sized balls.
-
Stuff and Shape: Take a small lemon-sized portion of resting dough. Grease a thick plastic sheet or banana leaf with oil or ghee. Flatten the dough ball slightly with your fingers, place a ball of poornam filling in the center, bring the outer dough edges together over the top, and seal completely into a smooth ball.
-
Roll and Roast: Gently flatten the filled dough ball using a rolling pin or greased fingers into a thin circular Bobbattu. Heat a tawa on medium heat, transfer the Bobbattu carefully onto the griddle, drizzle pure ghee around the edges, and roast both sides until golden spots appear. Serve warm!

Chef’s Pro Tips (ముఖ్యమైన చిట్కాలు)
English
-
Dough Resting: Giving the dough ample resting time with sufficient oil guarantees thin, soft, and elastic Bobbattu without tearing.
-
Drain Dal Completely: Ensure all excess water is removed from the boiled dal before adding to jaggery syrup to keep the poornam thick and easy to shape.
-
Moderate Sweetness: Keep the jaggery ratio balanced with chana dal (1:1 ratio) to ensure the sweet flavor stays pleasant rather than overpowering.
తెలుగు
-
