Traditional Festive Tamarind Rice Prasadam
Pulihora (పులిహోర), widely recognized as Tamarind Rice, needs no introduction across South India, especially in the vibrant households of Andhra Pradesh. Commonly referred to as Chitranna in neighboring Karnataka, this special dish holds a cherished place during all major festivals, often served alongside traditional sweets like Boorelu or Bobbatlu. Beyond home celebrations, Pulihora is universally distributed as a divine prasadam in temples, carrying an unreplicable mystical flavor that makes people wonder why homemade versions taste different. Prepared by mixing fluffy non-sticky Sona Masuri rice with a concentrated, slow-cooked tamarind paste, roasted groundnuts, chana dal, curry leaves, and a sizzling tempering, this iconic Pulihora tastes even more heavenly the next day.

Method of Preparation (తయారీ విధానం)
English
-
Cook Rice: Cook the rice ensuring the grains do not get sticky. Once cooked, spread it out in a wide bowl or dish to cool slightly for about 5 minutes. Mix the rice evenly with 1 tablespoon of oil, salt to taste, and turmeric, taking care not to mash the rice grains.
-
Prepare Tamarind Paste: While the rice is cooking, soak the tamarind for about half an hour and extract the juice free of all pulp and seeds. Shift the tamarind juice to a vessel, add 2 red chillies, a few drops of oil, a stalk of curry leaves, a pinch of asafoetida, a pinch of turmeric, a pinch of fenugreek powder (optional), and a little salt. Put it to boil until the tamarind becomes a thick consistent paste. (Tip: You can make this paste in a larger quantity to store for about a month, though making it fresh tastes best).
-
Mix Rice & Tamarind: Mix the prepared rice and tamarind paste together and keep it aside, ensuring you do not mash the rice grains.
-
Fry Groundnuts: Take a pan, fry the groundnuts in oil, drain the oil, and add them to the rice.
-
Prepare Popu (Tempering): Within the same oil, prepare the popu (tadka) by frying mustard seeds, chana dal, cumin (jeera), red chillies, asafoetida, curry leaves, and green chillies.
-
Final Toss & Serve: Add this tempering mixture along with the leftover oil to the rice and mix thoroughly. Delicious Pulihora is ready!
