Masala Dosa Recipe in Telugu English
Masala Dosa is one of the most popular and iconic breakfast dishes across South India. While preparing an authentic Masala Dosa requires a bit of planning for batter fermentation and filling preparation, the rich taste of a crispy golden crepe stuffed with flavorful potato curry makes every bit of effort completely worth it.

Drain the water and wet grind all soaked ingredients into a smooth, fine batter.

Next morning, add salt to taste, 1/2 teaspoon baking soda, 1 tablespoon sugar, and a little water to adjust the consistency. Mix gently in one direction.
-
Heat a dosa tawa (griddle) on medium-high heat. Pour a ladleful of batter onto the center and spread outward in a thin circular motion to make a thin dosa.

Drizzle a tablespoon of oil around the edges and top until the bottom turns golden and crispy.
-
Spread a small spoon of fresh coconut chutney or red chutney evenly over the inner side of the dosa.
-
Place a portion of cooked potato curry in the middle, drizzle a teaspoon of fresh ghee over the edges, fold one side over the filling, and serve your hot Masala Dosa immediately.

Chef’s Pro Tips (ముఖ్యమైన చిట్కాలు)
-
Secret for Golden Color: Adding a tablespoon of sugar and a handful of Bengal gram dal (chana dal) to the batter produces that deep restaurant-style golden brown crust on your Masala Dosa.
-
Crispy Texture: Rice flakes (poha) and fenugreek seeds ensure the crepe stays lightweight and exceptionally crispy.
-
Temperature Control: Wipe the hot tawa with a damp cloth or onion slice before pouring each new Masala Dosa to keep the surface temperature consistent.
Frequently Asked Questions (FAQ)
Q1. What gives Masala Dosa its iconic golden color? A: Adding chana dal during soaking and stirring a spoonful of sugar into the fermented batter creates the classic golden shade when caramelizing on the tawa.
Q2. Can I use red chutney instead of coconut chutney on the Masala Dosa? A: Yes, spreading a fiery red onion-garlic or tomato chutney over the inner surface turns this dish into an authentic Mysore-style Masala Dosa.
Q3. Why is my Masala Dosa turning soft instead of crispy? A: Softness occurs if the tawa is not hot enough, if the batter is too thick, or if too little oil/ghee is used during roasting.
Q4. Can I skip the baking soda in the batter? A: Yes, if the batter fermenting overnight has expanded and bubbled well, baking soda can easily be skipped.
Q5. How can I store leftover batter for future use? A: Unused fermented batter can be refrigerated in an airtight container for 3 to 4 days. Do not add sugar until right before cooking.
Q6. What potato preparation works best for Masala Dosa? A: Coarsely mashed boiled potatoes cooked with onions, turmeric, green chillies, and mustard seeds temperings yield the best filling.
