Method of Preparation (తయారీ విధానం)
English
-
Wash the rice and all the dals (black gram, green gram, Bengal gram, and red gram) thoroughly in water. Soak them together in a bowl for 5 to 6 hours.
-
Drain the soaking water and transfer the rice and dals to a wet grinder or blender. Grind into a smooth batter.
-
Add the dried red chillies, coriander seeds, and ginger to the grinder towards the end, grinding everything into a fine, spice-infused batter.
-
Pour the batter into a large bowl, cover, and let it ferment for 6 to 8 hours.
-
After fermentation, add the grated carrot, chopped onions, shredded cabbage, chopped ginger pieces, fresh coriander leaves, and salt to taste. Mix the batter thoroughly.
-
Heat a dosa tawa (griddle) on medium flame. Pour a ladleful of the vegetable-rich batter onto the center and gently spread it outward into a thick circle.
-
Drizzle a tablespoon of oil around the edges and top. Roast both sides until golden brown and crispy. Serve hot with fresh coconut chutney or red chilli chutney.

Chef’s Pro Tips (ముఖ్యమైన చిట్కాలు)
-
Finely Shredded Veggies: Ensure the carrots, cabbage, and onions are chopped very finely so the Vegetable Dosa cooks evenly without breaking when flipping.
-
Spice Customization: Adjust the number of red chillies according to your spice preference; grinding them directly with coriander seeds yields a beautiful natural color.
-
Thicker Spread: Because this batter is packed with fresh vegetable bits, spread it slightly thicker like an uttapam rather than a paper-thin crepe.
Frequently Asked Questions (FAQ)
Q1. Can I make Vegetable Dosa without fermenting the batter?A: Yes, since this contains multiple dals, you can make instant adai-style dosas immediately after grinding, though fermenting improves softness and digestibility.
Q2. What other vegetables can I add to Vegetable Dosa?A: Finely chopped capsicum, grated beetroot, sweet corn kernels, or chopped spinach (palak) blend very well into this batter.
Q3. Is red chilli spice necessary for this recipe?A: Red chillies give the Vegetable Dosa its signature spice bite and reddish tint, but you can replace them with green chillies if preferred.
Q4. Why is my Vegetable Dosa breaking while turning on the tawa?A: If the vegetable pieces are too large or the batter is too thin, the dosa may split. Keep the veggies finely shredded and the batter medium-thick.
Q5. How long can I keep this batter fresh?A: You can store the unseasoned fermented batter in the refrigerator for up to 3 days. Add the fresh vegetables right before cooking.
Q6. Can I use ghee instead of oil for frying Vegetable Dosa?A: Yes, cooking with ghee enhances the richness and gives a wonderful traditional South Indian aroma.
