👩🍳 Method of Preparation | తయారీ విధానం
Step-by-Step Instructions (English)
-
Extract Tamarind Water: Soak the lemon-sized tamarind in 2¼ cups of warm water for 10 minutes. Squeeze thoroughly to extract juice and strain the seeds and pulp. Stir in the jaggery until dissolved.
-
Prepare Tempering: Heat 4 tablespoons of oil in a vessel or deep pan over medium flame. Add mustard seeds and let them splutter. Add Bengal gram dal and black gram dal, frying until they turn golden brown.
-
Sauté Vegetables: Add the sliced onions to the pan and sauté until soft and translucent. Add the chopped tomatoes and cook for about 2 minutes until tender.
-
Add Spices & Tamarind Water: Add 2 tablespoons of sambar powder and salt to taste. Pour in the prepared tamarind-jaggery water (2¼ cups) and bring the mixture to a rolling boil over medium-high heat.
-
Cook Rice Flakes: Lower the flame. Rinse thick rice flakes quickly in water, drain immediately, and add them into the boiling liquid. Stir well so the rice flakes absorb the liquid evenly without forming lumps.
-
Simmer & Rest: Cover the vessel with a lid and cook on low flame until all water is completely absorbed and the upma turns soft and fluffy.
-
Garnish & Serve: Turn off the stove. Garnish with freshly scraped coconut and finely chopped coriander leaves. Serve hot.
