👩‍🍳 Method of Preparation |

Step-by-Step Instructions (English)

  1. Grind Chili-Coconut Paste: Add green chilies, freshly grated coconut, and salt to a small mixer jar and pulse coarsely without adding water to form a flavorful paste.

  2. Wash and Drain Rice Flakes: Take medium-thickness rice flakes in a colander, wash thoroughly under running water, soak for just 1 to 2 minutes, and drain all excess water completely. Keep aside.

  3. Prepare Tempering: Heat 5 tablespoons of oil in a broad pan or kadai. Add mustard seeds and let them splutter. Add Bengal gram dal and black gram dal, frying on low flame until they turn light golden brown.

  4. Sauté Onions & Paste: Add curry leaves and chopped onions to the pan. Sauté until the onions become soft and translucent. Add the prepared green chili-coconut paste and turmeric powder. Fry on medium flame for a minute until aromatic.

  5. Add Rice Flakes: Add the rinsed and drained rice flakes into the pan. Mix gently using a soft spatula from the bottom up so the rice flakes don’t break. Heat thoroughly for 2–3 minutes while mixing.

  6. Finish with Lemon & Serve: Turn off the stove, squeeze fresh lemon juice over the hot upma, and mix well. Garnish with chopped coriander leaves and a little extra grated coconut. Serve hot.

💡 Chef’s Pro Tips |

  • Rice Flakes Thickness: Always select medium-thickness rice flakes. Very thin flakes turn mushy when washed, while very thick flakes require longer soaking.

  • Avoid Over-soaking: Rinse the rice flakes quickly and drain completely; do not leave them submerged in water for too long.

  • Add Groundnuts: Adding a handful of roasted peanuts (groundnuts) along with the dal tempering adds a wonderful crunch to the upma.

  • Gentle Toss: Always toss upma gently using a flat spatula to keep the rice flakes light and fluffy.

🔀 Flavor Variations |

  • Veggie Delight: Add finely diced tomatoes, boiled potatoes, green peas, or grated cucumber along with onions for extra nutrition and flavor.

  • Peanut Crunch: Fry groundnuts (peanuts) in oil before adding the lentils for a classic North Indian Poha style crunch.

🍽️ Serving Suggestions |

  • Best Pairings: Tastes best when served hot on its own, or alongside Sev / Mixture, Fried Chana Dal, or Coconut Chutney.

  • Teatime Snack: Makes an ideal, guilt-free evening teatime snack or quick morning breakfast.

❓ Frequently Asked Questions (FAQ)

Q1. Why did my Atukula Upma become mushy or sticky?

A: Over-soaking the rice flakes or using paper-thin rice flakes makes upma mushy. Drain water completely right after rinsing.

Q2. When should I squeeze lemon juice into the upma?

A: Always squeeze lemon juice after switching off the heat. Cooking lemon juice on heat can introduce a bitter taste.
