Method of Preparation (తయారీ విధానం)
English
-
Wash the fresh coriander leaves thoroughly and chop them fine. Clean and chop the onions and tomatoes into small pieces.
-
Heat a skillet over medium flame. Separately dry roast the peanuts, chana dal, coriander seeds, dry red chillies, and sesame seeds until golden and fragrant.
-
Allow the roasted ingredients to cool down completely, then grind them into a coarse masala powder in a blender jar and set aside.
-
Heat 1/4 cup of oil in a thick-bottomed pan. Add tempering seeds (mustard, cumin, urad dal) and let them crackle. Add chopped onions and tomatoes, cover with a lid, and cook on low heat until soft and paste-like.
-
Slit the small brinjals vertically and horizontally (X shape from the base like Gutti Vankaya), then add them to the onion-tomato mixture in the pan.
-
Pour 2 glasses of water into the pan, add turmeric powder and salt, then simmer until the brinjals become soft and the water reduces by half.
-
Add the prepared roasted spice powder into the pan, stir well to prevent sticking to the bottom, and simmer on low heat for 2 minutes. Sprinkle fresh coriander leaves on top and remove from heat.

Chef’s Pro Tips (ముఖ్యమైన చిట్కాలు)
-
Brinjal Soaking: Keep the cut brinjals soaked in a bowl of salted water until cooking to prevent oxidation and browning.
-
Spice Roasting: Always roast sesame seeds and red chillies on low heat separately; sesame seeds pop quickly and can burn if overcooked.
-
Gravy Thickening: The homemade peanut-sesame powder thickens the gravy quickly, so stir regularly on low heat after adding it to prevent burning at the bottom of the pan.
