👩🍳 Method of Preparation (తయారీ విధానం)
Step 1: Soaking & Grinding
-
In a small bowl, soak the Chana Dal and Dry Coriander Seeds in water together for about 15 minutes.
-
Transfer the soaked dal and coriander seeds into a mixer jar along with the Green Chilies, Ginger, and fresh Coriander Leaves. Grind into a smooth, thick paste and keep it aside.
Step 2: Preparing Vegetables
-
If using Brinjal or Bottle Gourd, chop them into medium pieces and boil them separately in a little water until tender.
-
Leafy greens like Palakura, Bachali, or Thotakura or soft vegetables like Benda Kaya can be cooked directly in the pulusu liquid.
Step 3: Mixing & Simmering
-
In a mixing bowl or pot, take the Sour Buttermilk, add Salt and Turmeric Powder, and whisk thoroughly.
-
Mix the ground spice paste into the buttermilk liquid until smoothly combined.
-
Add your prepared vegetables to this mixture.
-
Place the pot on low heat (simmer) for about 3 minutes, allowing it to come to a gentle simmer. (Do not boil on high heat as buttermilk may curdle).
Step 4: Tempering (Tadka / Popu)
-
Heat 1 tbsp of oil in a small tempering pan.
-
Add Mustard Seeds, Cumin Seeds, Fenugreek Seeds, and Hing (Asafoetida).
-
Once the seeds crackle, add the cut Dry Red Chilies and fry for about 30 to 45 seconds until aromatic.
-
Pour this hot tempering directly into the simmering buttermilk mixture.
Step 5: Final Simmer
-
Simmer the tempered Challa Pulusu gently for another 3 minutes on low flame to allow all the flavors to meld together. Turn off the stove and serve hot with steamed rice.
💡 Chef’s Pro Tips for Perfect Challa Pulusu
-
Prevent Curdling: Always keep the heat on low-to-medium while simmering buttermilk. Rapid boiling on high heat causes curdled Separation.
-
Fenugreek (మెంతులు) Flavor: Do not burn the fenugreek seeds in the tadka, as burnt fenugreek adds bitterness. Fry until lightly golden brown.
-
Sourness Adjustment: If the buttermilk is not sour enough, you can add a small dash of lemon juice at the end after turning off the heat.
